EXCELLENCE red is vinified by VMV - Vignerons du Mont-Ventoux so as to obtain a wine matching perfectly the criteria of typicity of the AOC Ventoux. The wine derives from grapes harvested in all the area of production of the winery on the southern slope of the Mount-Ventoux. Their altitude ranges from 200m to 580m above sea-level.  Soils : decomposition of hard limestone and ancient alluvium, slightly sandy 

The grapes are carefully sorted out and completely de-stemmed. Each grape is vinified apart. Alcoholic fermentation at controlled temperature (28/30°C) with daily pumping-overs and several punching down of the cap. Blending after completion of the malolactic fermentation. Ageing in cement vats. 

This beautiful cherry red-coloured wine takes you on a walk into the forest, with its vegetal aromas and notes of copses. It is very expressive on the palate with a great freshness and smoothness, hints of spice and notes touches of clove that create an overall harmony. A wine all about finesse, with light and silky tannins.
